our story

Nomad Pizza started as a wood-fired oven on the back of a vintage 1948 REO Speedwagon. with a Focus on simplicity and authenticity, we embraced the basicsβ€”fresh local ingredients, long fermented dough, and wood-fired ovens. nomad has since grown into three Brick and Mortar restaurants in the Central New Jersey/Philadelphia area. Matt Shankle and Tom Grim (Nomad Co-founder) now bring this concept to Brunswick, ME.

So why Maine?

Tom has roots here in Maine. Tom’s son Aaron and daughter-in-law briis founded Cosmic Goat Farm & Creamery in Litchfield, me specializing in fresh organic goat cheese. tom’s son Nicholas and daughter-in-law Noelle created Nomad Pasta co. in Belfast, me Making fresh and dried specialty pasta. they have recently moved their operation to the nomad kitchen.

Matt has an extensive background in restaurant and specialty foods. he was introduced to nomad while selling imported Italian cheese and meats in Philadelphia. in 2014 matt began managing and catering events for the nomad pizza trucks. while catering a friend's wedding in Portland on a rented Maine Wood Heat pizza trailer and witnessing the bounty of local products and good community, Matt and Tom grew the idea of opening a pizzeria in Maine.
